Introduction

What is sweet tea?
Sweet tea is the phrase use by southerners to describe sweetened iced tea. When done wrong, as is often the case, sweet tea can be as unpleasant as flat Coke. But when done right, sweet tea cannot be beat as a readily available and affordable beverage.

What is the objective?
The goal is to have a cost and time minimized, continuous supply of consistent quality sweet tea. This document is targeted toward home comsumption. Restaurants have different needs and use a different procedure.

What makes sweet tea so good?
The bitterness of the tea, with the sweetness of sugar, and the sourness of the lemon, simultaneously work on all the tastebuds. The water quenches the thirst while the lemon adds freshness. It coats and soothes the throat. The sugar and caffeine trigger positive chemical responses in the brain. It can be cheaply and easily made anywhere. It doesn't have the environmental problem of disposable containers...
